About the Opportunity

This is a rare opportunity to step into a key leadership role and help bring one of Melbourne’s most exciting new hospitality venues to life.

Reporting to the General Manager and working closely with the Senior Leadership team, you will play a pivotal role from the ground up — leading the pre-opening journey, building and shaping a high-performing team, and setting the tone for an exceptional guest experience from day one.

You’ll be at the forefront of establishing operational excellence, driving day-to-day performance and embedding a culture that reflects the ambition and energy of The Saint. From recruiting and developing your team to refining systems and service standards, you’ll help create a venue that stands out in Melbourne’s competitive hospitality scene.

Hands-on, commercially minded and deeply passionate about people and service, you’ll be instrumental in building a strong culture and operational foundation that sets The Saint up for long-term success.

What You'll Do

  • Lead daily venue operations across all areas of the venue, ensuring consistent service excellence, strong financial performance and full compliance with licensing, WHS and workplace legislation.

  • Support the General Manager in delivering strong financial performance, budgeting and cost control.

  • Recruit, train and develop high-performing Front-of-House and Back-of-House teams while fostering a positive, accountable and guest-focused culture.

  • Oversee rostering, labour management and payroll accuracy and maintain exceptional standards of presentation, cleanliness and safety.

  • Build strong relationships with suppliers, stakeholders and the local community and lead service delivery for functions, events and high-volume trade.

  • Collaborate with the Head Chef and General Manager to develop and refine menus, specials, seasonal offerings and beverage lists, while planning engaging event nights and activations.

  • Manage ordering, stocktakes and inventory control to minimise waste and optimise margins.

  • Support the rollout of new concepts and service initiatives, ensuring all offerings align with brand standards and commercial targets and use performance data and guest feedback to drive continuous improvement and revenue growth.

 

About You

You're approachable, practical and energised by fast-paced hospitality. You love being the calm, capable person everyone relies on. You'll also bring:

  • 3+ years' experience as a Venue Manager or Senior Assistant Manager in a high-volume venue

  • Experience managing multi-level venues with similar operational complexity is essential.

  • Strong knowledge of Victorian liquor licensing and hospitality compliance

  • Demonstrated experience managing gaming operations and understanding of Victorian gaming compliance

  • Proven ability to lead, motivate and retain large teams

  • Solid financial and operational management skills

  • High attention to detail and strong organisational ability

  • Confident communication and stakeholder management skills

  • A hands-on, solutions-focused mindset

  • Genuine pride in creating memorable guest experiences
