The Role

Join us as Head of Bars & Nightlife and define the future of nightlife strategy, cocktail culture and late-night experiences at Crown Melbourne.

Reporting to the Executive General Manager - Food & Beverage, you will lead the performance, growth and strategic direction of Crown Melbourne's bars and nightlife portfolio.

This influential leadership role is responsible for shaping Crown's nightlife identity across a collection of premium bars, cocktail lounges and late-night venues. From world-class beverage programs and VIP experiences to entertainment and venue activations, you will create memorable experiences that strengthen Crown Melbourne's position as a leading nightlife destination.

In this role, you will:

• Lead the strategic direction, performance and brand identity of Crown Melbourne's bars, cocktail lounges and nightlife venues.
• Oversee portfolio financial performance including revenue growth, beverage profitability, labour management, EBITDA and business planning outcomes.
• Drive industry-leading cocktail, wine, spirits and beverage programs that reinforce Crown's premium market position.
• Curate and oversee entertainment, venue activations and exclusive nightlife experiences that drive guest engagement and visitation.
• Build strategic partnerships with leading beverage brands, suppliers, promoters and entertainment partners.
• Create premium VIP experiences and commercial opportunities that drive loyalty and revenue growth.
• Lead pricing strategy, menu development and beverage innovation to optimise venue performance.
• Champion exceptional guest experiences through industry-leading standards across service, atmosphere, safety and presentation.
• Lead, coach and develop a high-performing leadership team, fostering a culture of creativity, accountability and excellence.
• Represent Crown's bars and nightlife portfolio within the hospitality industry, strengthening brand awareness and reputation.

About You:

You are an accomplished hospitality executive with extensive experience leading premium bars, nightlife venues, entertainment destinations or luxury hospitality operations.

Passionate about beverage culture, entertainment and emerging nightlife trends, you are commercially astute, strategically focused and have a proven track record of building successful hospitality brands, developing talented teams and delivering strong business outcomes.

You will also bring:

• Significant senior leadership experience within premium bars, nightlife venues, entertainment precincts or luxury hospitality environments.
• Proven success managing complex multi-venue portfolios and delivering strong commercial outcomes.
• Deep expertise in cocktail culture, spirits, wine and emerging beverage trends, with a strong understanding of the premium bar landscape.
• Strong financial acumen with experience managing large-scale budgets, forecasting, pricing strategy and profitability initiatives.
• Experience developing strategic partnerships within the beverage, entertainment or hospitality sectors.
• Exceptional leadership capability with a history of developing high-performing teams and fostering a culture of innovation and accountability.
• Strong knowledge of liquor licensing, RSA requirements, compliance obligations and late-night venue operations.
• Relevant tertiary qualifications in Hospitality Management, Business or a related discipline will be highly regarded.
